Kenna Laslavic’s favorite kitchen appliance is her high-speed blender. She finds seasonally-available fruits and vegetables in the Bay Area and each morning incorporates them into a new recipe that is raw, vegan, gluten free, low glycemic and delicious.

Thankfully for us, she has started sharing her artistic concoctions online at “My Daily Smoothie”. Each recipe comes with a photo and detailed nutritional information. Try her peach, avocado, and apricot smoothie recipe, below. She was also kind enough to answer a few questions about the recipe and how she got in to making smoothies. Peach Apricot Avocado Smoothie

Yields 2 generous servings

1 avocado (176g)

2 yellow peaches (289g)

4 apricots (231g)

Slice of ginger (7g)

53g kale (about a cup)

1 tsp vanilla extract (I like Singing Dog brand)

Add water and ice to taste. Blend.

This is more of an “expert” smoothie. If you are a smoothie beginner, you will want to add sweetener. This is creamy, peachy, and wonderful. Enjoy!


Earthbody: What led you to start making smoothies?

Kenna Laslavic: I got into making smoothies about two years ago when a friend of mine was horrified to learn that I did not own a high-speed blender. He said every vegan needs one, especially vegans who are curious about raw foods and interested in eating healthier. I thought they were way too expensive but I broke down and bought a refurbished one to see what all the fuss was about. I love it. I cannot believe I waited so long to get one. The only appliance I use more often in my kitchen is my refrigerator.

I used smoothies to break my bad breakfast habits (I am a former cereal-eater and store-bought orange juice drinker). In the morning, I am always dehydrated and I crave something cool, refreshing, and sweet. I used to reach for the cereal with extra soy milk. Now, I make a smoothie. I love smoothies because they are a great way to give my body the hydration it needs with the flavor I crave, and a kick of protein to last me all the way to lunch. Plus, smoothies are fast and easily packed to take to work or school, they help you eat seasonally-available fruits and vegetables, and cleanup is a breeze.

Earthbody: Tell us about your peach, avocado, and apricot smoothie that is featured above.

Kenna Laslavic: The peach, avocado, apricot smoothie is a great example of resourcefulness. I was out of bananas, which I typically use in smoothies to provide sweetness and texture, and I had some bruised peaches and apricots from the farmer’s market that needed to be eaten immediately. So I went with avocado instead of banana and decided to craft something that would still feature the peaches and apricots. I also had a bunch of kale that was a little wilted so I threw that in the mix. Why not? On top of this creamy green base, the apricots and peaches really shine through. The smoothie is creamy and refreshing, but not the least bit sweet. That’s why I call this an “expert” smoothie because you have to have already gotten used to the flavors of pure, unsweetened, raw plants before this smoothie will taste good to you. But don’t worry if you aren’t an “expert” smoothie-drinker yet—just add a little maple syrup, agave nectar, or fresh-pressed apple juice and you will be set. You’ll get tons of vitamins and minerals from the kale and protein and good fats from the avocado, and the apricots provide a potassium punch that will keep your muscles strong and cramp-free through your morning workout. This smoothie provides all your daily recommended vitamins A and C and about 1/3 of your daily recommended potassium (based on a 2,000 calorie diet).
