Denmo’s Kitchen: Maka Delicata Bowl

I’ve fallen in love with delicata squash! Partially because of its yumminess. Partly because it requires no peeling. Delicata has a delicious nutty taste that’s easy to make and is a wonderful addition to any meal. This healthy, warm maka bowl was inspired by the recent  cold days and my love for salads and mesa plates. Perfect as a hearty lunch or a well balanced dinner, this one is sexy, delicious, and worth the extra time to prepare.

Maka Delicata Bowl

Serves 4

Ingredients:

  • 1 delicata squash (seeded, quartered)
  • 2 cups of kale (de-stemmed)
  • 1 can kidney beans
  • 1 can pinto beans
  • 1 lb ground turkey
  • 1 head of broccoli crowns, chopped
  • ½ cup of red cabbage, sliced
  • ½ cup mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ onion, chopped
  • Olive Oil
  • Tamari (wheat free soy sauce)
  • Salt, Pepper, Cumin, Paprika
  • Nutritional Yeast (optional)

Directions:

  1. Toss delicata squash with olive oil, salt, and pepper. Lie flat on baking sheet. Bake at 350 degrees for 25 minutes. Turn off the stove when the timer goes off and let rest in oven.
  2. Sautee garlic and onions in olive oil. Add cabbage, broccoli, and mushroom in a large frying pan. Cook for 5 minutes. Remove from heat and cover.
  3. In another large frying pan, warm about 2 tbls of olive oil in pan and brown turkey meat on medium heat, stirring often. Add about ½ tsp each of cumin, paprika, and 1 tbls of tamari.
  4. In pot, mix kidney and pinto beans together and about 1 tbls of tamari. Cook on medium heat for 5 minutes. Add tamari to taste. Remove from heat and cover.
  5. In another frying pan, flash fry kale to wilt, for about 3 minutes on high heat. Remove from heat and cover.

In large bowl or plate, begin layering your maka bowl in sections: kale, beans, squash, meat, and veggies (or you can separate these out if you want each color to pop). Sprinkle nutritional yeast on your delicata. Say grace. Enjoy! xo denmo
